Ingredients

  • ½ cup unsulfured mild molasses

  • 1 large egg, at room temperature
  • 6-¾ oz. (1-½ cups) unbleached all-purpose flour
  • ½ tsp. baking soda
  • 1 tsp. ground cinnamon
  • 2 tsp. ground ginger

    • 4 oz. (½ cup) unsalted butter, at room temperature; more for the pan
    • ½ cup buttermilk, at room temperature
    • ¼ cup granulated sugar
    • ¼ tsp. table salt
    • 1 Tbs. minced fresh ginger
    • ¼ cup packed dark brown sugar
