Ingredients

  • 2/3 cup sweetened flaked coconut
  • ¼ cup fresh mint leaves, cut into strips
  • 2 (20-ounce) cans pineapple chunks, drained
  • 6 large navel oranges
  • Garnish: fresh mint sprig
  • 1 ½ tablespoons grated fresh ginger
  • ¼ cup fresh mint leaves, cut into strips
  • + 3 more ingredients
    • 2 (20-ounce) cans pineapple chunks, drained
    • 2 ½ tablespoons fresh lime juice
    • 2/3 cup sweetened flaked coconut

Peel and section oranges over a bowl, reserving juice. Combine orange sections, juice, and remaining ingredients; gently toss. Cover and chill until ready to serve. Garnish, if desired.
