Gingered Fig Preserves

  • 1 cup sugar
  • 1 pound dried Calimyrna figs, stemmed
  • 3 tablespoons fresh lemon juice
  • 1 ¾ cups water
  • 3 (1-inch) pieces peeled fresh ginger
  • ½ cup fresh orange juice (about 1 large orange)
  • 2 teaspoons grated orange rind
  • + 1 more ingredients
    • ½ cup chopped crystallized ginger (about 3 ounces)

Combine first 6 ingredients in a large saucepan. Bring to a boil over medium-high heat, stirring until sugar dissolves.
