Gingered Orange Beets

Ingredients

• 1 ½ teaspoons grated fresh ginger
• 6 medium beets, peeled and sliced into 1/4-inch-thick slices (about 2 pounds)
• ½ teaspoon salt
• 1 tablespoon orange juice
• ¼ teaspoon pepper
• 2 teaspoons olive oil
• ¼ cup orange marmalade

Combine first 4 ingredients in a large bowl; toss gently. Set aside. Combine ginger, marmalade, and orange juice in a small bowl, stirring well. Set aside.
