Gingered Soy Sauce
- 1 piece fresh ginger, about 1-½x2 inches, peeled
- 1/3 cup soy sauce
- 1 Tbs. plus 1 tsp. granulated sugar
- 2 tsp. fresh lime juice
- ¾ tsp. sambal badjak or sambal oelek, or to taste
- 3 Tbs. mirin (sweetened rice wine)
