GingerPecan Roulade with HoneyGlazed Pecans
Ingredients
- ½ cup crystallized ginger
- Honey-glazed pecans
- 4 tablespoons unsalted butter
- ¾ cup pecans
- ¼ cup cake flour (not self-rising)
- 1 tablespoon unsweetened cocoa powder
- 1 ½ teaspoons ground ginger

- 5 large eggs
- 1/3 cup dark brown sugar
- 1 ¼ cups heavy cream

Preheat oven to 350°F. Line bottom and sides of a 15- by 10- by 1-inch jelly-roll pan with foil, dull side up, and brush with melted butter. Dust pan with flour, knocking out excess.
