Goat Cheese and Honey Blancmange

Ingredients

  • 6 ounces goat cheese
  • 1 ¼ cups skim milk
  • 1 tablespoon fresh basil
  • ¼ cup honey
  • 1 vanilla bean
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon confectioners' sugar
  • + 5 more ingredients
    • 2 teaspoons lemon thyme
    • 1 tablespoon agar flakes (a seaweed gelatin) or powdered gelatin
    • 1 pint fresh strawberries
    • 1 cup half-and-half
    • ½ teaspoon freshly ground black pepper

Pour milk into a medium pot and sprinkle agar on top. Allow to rest until agar (or gelatin) becomes clear and puffs slightly, 10 to 15 minutes.
