  • 6 cups baby arugula
  • ½ cup red onion
  • 3 tablespoons olive oil
  • 2 tablespoons capers
  • ¼ cup extra-virgin olive oil
  • 2 tablespoons fresh chives
  • 4 medium (2 1/2-inch diameter) golden beets

Preheat oven to 375°F. Toss beets with oil in roasting pan. Sprinkle with salt. Cover pan with foil. Roast beets until tender, about 50 minutes.
