Golden Egg White Omelets with Spinach and Cheese

- 2 medium yellow bell peppers
- ¼ cup plus 2 tablespoons water
- 1 small onion, finely chopped
- 3 teaspoons olive oil
- 2 (5-ounce) bags baby spinach, coarsely chopped
- 1 ½ teaspoons salt
- ½ teaspoon black pepper
