Golden Potato Latkes

Ingredients

• 2 tablespoons lemon juice
• 1 teaspoon kosher salt
• Garnishes: small Yukon gold potatoes, green onions
• 3 pounds Yukon gold potatoes, unpeeled
• 6 tablespoons peanut oil
• 6 tablespoons butter
• 2 large eggs, lightly beaten
