Golden Quinoa Salad with Mango and Walnuts

Ingredients

  • 1 cup California walnuts, toasted and roughly chopped
  • ½ cup chopped fresh mint
  • 1 chili pepper, finely chopped
  • 1 green onion, thinly sliced
  • 1 red pepper, sliced
  • 2 ripe mangoes, chopped
  • 1 cup quinoa
  • + 9 more ingredients
    • Salad:
    • ¼ cup extra virgin olive oil
    • ½ teaspoon black pepper
    • ½ teaspoon salt
    • 2 teaspoon curry powder
    • 1 tablespoon minced gingerroot
    • 2 tablespoon lime juice
    • 1/3 cup plain lowfat yogurt
    • Dressing:

In medium bowl, whisk together yogurt, lime juice, ginger, curry, salt, pepper and oil. Set aside. Salad: Add quinoa to a large saucepan of boiling salted water. Cook 10 minutes.
