Golden Raisin and Apple Lattice Pie

Ingredients

• ½ cup cake flour
• 4 ½ teaspoons sugar
• 9 tablespoons unsalted butter
• 3 ¼ pounds Golden Delicious apples
• 3 tablespoons unsalted butter
• 2 teaspoons fresh lemon juice
• 1 cup golden raisins

  • 1 large egg yolk
  • 1 ½ cups all purpose flour
  • 1 tablespoon whipping cream
  • 3 tablespoons solid vegetable shortening
  • 11 teaspoons sugar
  • ¾ teaspoon salt
  • 6 tablespoons water

Blend flour, cake flour, sugar and salt in processor. Add butter and shortening and cut in using on/off turns until mixture resembles coarse meal.
