Gorgonzola and Leek Crème Brûlée

Ingredients

  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon minced fresh dill or tarragon
  • Salt and freshly ground black pepper to taste
  • 5 ounces Gorgonzola cheese

  • 1 small yellow onion
  • 3 tablespoons Italian parsley
  • + 5 more ingredients
    • 1 cup half-and-half
    • 2 medium-large leeks
    • 24 teaspoons grated Parmesan cheese
    • 1 cup heavy (whipping) cream
    • 5 large egg yolks

Preheat the oven to 275°F. In a medium saucepan, heat the oil over medium heat. Add the leeks and onion, and sauté for 7 to 10 minutes, or until soft.
