Granola with Pecans and Dried Fruit


  • Nonstick cooking spray
  • 1/3 cup vegetable oil
  • ½ cup packed light-brown sugar
  • 1 tablespoon pure vanilla extract
  • ¾ teaspoon ground cinnamon
  • ½ teaspoon fine salt
  • 3 cups rolled oats

    • 2 cups coarsely chopped pecans
    • 1 cup sweetened shredded coconut
    • 1 cup mixed dried fruit, such as cranberries or raisins
    • 1 cup chocolate chips (optional)
    • ½ cup honey

1. Preheat oven to 300 degrees, with racks in upper and lower thirds. Lightly coat two rimmed baking sheets with cooking spray.
