Ingredients
- 2 red peppers or pimentos, washed
- 1 pound shredded sharp Cheddar
- 1 cup mayonnaise
- Dash hot sauce, such as Crystal
- Kosher salt and freshly ground black pepper
- Vegetable oil, for frying
- 2 cups panko breadcrumbs
- + 6 more ingredients

- 2 cups all-purpose flour
- 3 eggs, beaten
- 1 large green tomato, sliced ¼-inch thick
- Kosher salt and freshly ground black pepper
- 2 slices Texas toast, toasted (we use Texas toast, but you can use your favorite variety)
- 3 strips bacon, fried
For the pimento cheese: To roast the peppers, you can either char them on high heat on a gas range stove by placing them directly onto the grates, or roast them in the oven(which is what I like to do).
