Ingredients

  • ¾ teaspoon salt
  • 2 tablespoons green crème de menthe
  • 1 offset spatula
  • 10 ounces fine-quality white chocolate
  • ½ cup heavy cream
  • 10 ½ ounces fine-quality bittersweet chocolate (not extra-bitter or unsweetened and no more than 60% cacao)
  • 6 tablespoons unsweetened Dutch-process cocoa powder

    • ¾ cup unsalted butter
    • ¾ cup all-purpose flour
    • 1 ½ cups light brown sugar
    • 3 large eggs
    • 1 ¼ teaspoons vanilla
    • 1 teaspoon peppermint extract
    • 10 ounces fine-quality bittersweet chocolate (not unsweetened)
    • 1 cup heavy cream
