  • 1 lb. small new red potatoes (about 10), scrubbed
  • ½ cup freshly grated Parmigiano Reggiano
  • 3 Tbs. olive oil
  • 1 Tbs. thinly sliced fresh chives
  • Kosher salt and freshly ground black pepper
