Greek-Herbed Spinach Latkes with Feta-Yogurt Sauce

Ingredients

  • 1/3 cup crustless challah or other egg-bread pieces
  • 4 tablespoons butter
  • 1 ½ teaspoons baking powder
  • 4 large eggs
  • 1 clove garlic
  • 2 tablespoons olive oil
  • 1 bunch green onions
  • + 3 more ingredients
    • 2 10-ounce packages frozen chopped spinach
    • Feta-Yogurt Sauce
    • ½ bunch fresh dill

Melt 2 tablespoons butter in heavy medium skillet over medium heat. Add green onions and garlic; sauté until onions are soft, about 2 minutes.
