Green Beans, Corn, and Pea Salad

Ingredients

  • 1 medium-size red bell pepper, chopped
  • ½ cup white wine vinegar
  • 1 (16-oz.) package frozen small baby green peas, thawed
  • ¼ cup vegetable oil
  • ¼ cup vegetable oil
  • ½ cup white wine vinegar

    • 1 (16-oz.) package frozen white corn, thawed
    • 1 (16-oz.) package frozen French-cut green beans, thawed
    • ¼ teaspoon pepper
    • ¼ teaspoon salt
    • ¼ teaspoon salt
    • ¼ cup sugar
    • 1 (16-oz.) package frozen white corn, thawed
    • 1 (16-oz.) package frozen small baby green peas, thawed
    • 1 medium-size red bell pepper, chopped
    • ¼ cup sugar
    • 1 (16-oz.) package frozen French-cut green beans, thawed

1. Whisk together first 5 ingredients in a large bowl. Add red bell pepper and remaining ingredients; toss to coat. Cover and chill at least 2 hours or up to 8 hours. Stir before serving with a slotted spoon.
