Green Beans with Shallots and Almonds

  • 2 cups sliced shallots (about 4 large)
  • 2 tablespoons olive oil
  • Salt
  • 2 tablespoons unsalted butter, at room temperature
  • 2 pounds green beans, cut into 1-inch pieces
  • ½ cup sliced almonds, toasted

Fill a large bowl with ice cubes and water. Bring a large pot of salted water to a boil. Add green beans to pot and cook until crisp-tender, about 5 minutes. Drain and plunge beans into ice bath.
