  • 100 grams (7 ½ tablespoons) extra-virgin olive oil
  • 1.9 kilograms (8 cups) whole milk
  • 45 grams (3 tablespoons) kosher salt
  • 475 grams (3 ½ cups) sifted chickpea flour
