  • 1 cup crème fraîche
  • 3 sprigs fresh thyme
  • 1 head garlic, halved crosswise
  • 3 Tbs. extra-virgin olive oil
  • 4 tsp. fresh lemon juice
  • 3 fl. oz. (¼ cup plus 2 Tbs.) pale ale
