Grilled Cheese with Bacon and Guacamole

Ingredients

  • 3 oz. provolone, thinly sliced or coarsely grated (about ¾ cup)
  • 3 oz. aged gouda, sliced into thin shards or coarsely grated (about ¾ cup)
  • 3 oz. sharp Cheddar, sliced into thin shards or coarsely grated (about ¾ cup)
  • 1 tsp. fresh lime juice; more to taste
  • 1 tsp. minced fresh jalapeño
  • 4 to 6 slices bacon, cooked until crisp
  • 1-½ oz. (3 Tbs.) unsalted butter
  • + 5 more ingredients
    • 4 ½-inch-thick slices sourdough bread
    • Kosher salt
    • 1 Tbs. chopped fresh cilantro
    • 1 Tbs. finely chopped white onion
    • 1 ripe Hass avocado
