Grilled Corn on the Cob with Cilantro Queso Fresco Butter


  • 2/3 cup coarsely chopped cilantro
  • 1 teaspoon lime zest
  • ¼ cup mayonnaise
  • ¼ cup butter, softened
  • ½ cup queso fresco (Mexican-style fresh cheese)*
  • About ¼ cup kosher salt
  • 6 ears corn on the cob in husks
