  • 3 Tbs. extra-virgin olive oil; more as needed

  • 1321818Frank Ancona If you are trying to save some fat and/or calories, I grilled the eggplant with I Can't Believe It's Not Butter spray and it came out amazing. I would also recommend sprinkling red pepper flakes on them for a little kick.
