Grilled Green Peppers Stuffed with Beans and Rice

Ingredients

  • 1 whole onion, chopped
  • 3 large Green Peppers, cut into quarters (12 individual pieces)
  • ½ cup(s) cooked rice
  • 2 can(s) black beans , drained slightly
  • 1 bunch(s) fresh cilantro, coarsely chop
  • 1 tablespoon(s) southwestern seasoning, or 2 teaspoons chili powder and 2 teaspoon cumin
  • 2 tablespoon(s) of prepared medium to spicy salsa

    • Salt and pepper to taste
    • 1 ½ cup(s) grated cheddar cheese
    • 1 fresh tomato cubed
    • 1 can(s) chopped tomato, Mexican style
