Grilled Green Peppers Stuffed with Black Beans and Rice

Ingredients

  • salt and pepper to taste
  • 1 fresh tomato cubed
  • 1 ½ cups grated cheddar cheese
  • 2 tablespoons of prepared medium to spicy salsa
  • 1 tbp. southwestern seasoning (or 2 tsp. chili powder and 2 tsp. cumin)
  • 1 bunch fresh cilantro, coarsely chop
  • 1 can chopped tomato, Mexican style
  • + 4 more ingredients
    • 1 whole onion, chopped
    • 2 cans black beans, drained slightly
    • ½ cup cooked rice
    • 3 large green peppers, cut into quarters
