Grilled Grits with Chicken-Apple Sausages

Ingredients

  • Grits:
  • 2 cups finely chopped onion
  • ¼ teaspoon white pepper
  • 6 fennel seeds
  • 1 (28-ounce) can whole tomatoes, undrained
  • 5 cups water
  • 2 bay leaves
  • + 14 more ingredients
    • ¼ teaspoon dried marjoram
    • 1 cup stone-ground yellow grits
    • ¼ teaspoon hot pepper sauce
    • Tomato sauce:
    • ¾ teaspoon kosher salt
    • 6 basil leaves
    • 2 garlic cloves, minced
    • 2 teaspoons olive oil
    • ½ cup (2 ounces) grated fresh Parmesan cheese
    • 12 (1/2-ounce) chicken-apple sausages (such as Aidell's)
    • 1 cup thinly sliced celery
    • 2 dried chile peppers, lightly crushed
    • Remaining ingredient:
    • Cooking spray

To prepare grits, bring water and salt to a boil in a large saucepan; gradually stir in grits. Reduce heat; simmer 30 minutes or until thick, stirring frequently.
