Grilled Lamb and Halloumi Kebabs

Ingredients

  • 1 pound cherry tomatoes
  • 1 teaspoon pepper
  • 3 tablespoons red wine vinegar
  • About 5 tbsp. olive oil
  • 4 white or whole-wheat pita breads, halved and warmed
  • 1 tablespoon chopped fresh oregano, plus 1/4 cup whole oregano leaves
  • 1 pound lamb stew meat, cut into 1-in. cubes
  • + 3 more ingredients
    • 1 tablespoon chopped fresh mint leaves, plus 1/4 cup whole mint leaves
    • 1 teaspoon kosher salt
    • 8 ounces halloumi cheese, cut into 1-in. cubes

1. Heat grill to high (450° to 550°). Mix 5 tbsp. oil, the vinegar, salt, pepper, and chopped herbs in a large bowl. Measure 2 tbsp. and set aside.
