  • 4 lamb shoulder-blade chops (about 2 lb.)
  • Salt and pepper
  • 1 tablespoon lemon juice
  • 1/3 cup kalamata or other black olives, pitted and halved
  • ½ cucumber, peeled and thinly sliced
  • 3 ounces feta, crumbled
  • ¼ cup olive oil
  • + 4 more ingredients
    • ¼ small red onion, thinly sliced
    • 1 cup cherry tomatoes, halved
    • 1 tablespoon finely chopped fresh oregano
    • 8 cups mixed salad greens

Preheat a gas grill on high, covered, for 10 minutes, then turn heat to medium. Pat lamb chops dry with paper towels and sprinkle generously with salt and pepper.
