Grilled Lamb Rib Chops with a Rosemary & Sage Crust

Ingredients

  • ½ tsp. freshly ground black pepper
  • 1-½ Tbs. loosely packed medium-finely chopped fresh sage
  • 12 bone-in lamb rib chops, ½-inch thick
  • 3 Tbs. loosely packed medium-finely chopped fresh rosemary
  • Olive oil for coating the grill rack
  • ½ cup loosely packed medium-finely chopped fresh flat-leaf parsley
  • 1 tsp. kosher salt

Using your fingers, thoroughly mix the parsley, rosemary, sage, salt, and pepper in a shallow baking dish or pie pan.
