Grilled Lime Vinaigrette


  • 1 garlic clove, minced
  • ½ teaspoon freshly ground pepper
  • ½ teaspoon salt
  • 1 tablespoon minced fresh cilantro
  • 2 large limes, halved
  • ½ cup olive oil

Grill lime halves, cut side down, without grill lid, over medium-high heat (350° to 400°) 5 to 6 minutes.Juice lime halves; reserve rind for garnish, if desired. Add remaining ingredients. Cover tightly, and shake vigorously. Chill thoroughly.
