Grilled Mint-Lamb Chops


  • 1 large clove garlic, pressed
  • ½ cup grated onion
  • Vegetable cooking spray
  • ½ teaspoon pepper
  • 8 (5-ounce) lean lamb loin chops (1 inch thick)
  • ¼ cup plus 1 tablespoon chopped fresh mint, divided
