Grilled Mint-Lamb Chops
Ingredients
- 1 large clove garlic, pressed
- ½ cup grated onion
- Vegetable cooking spray
- ½ teaspoon pepper
- 8 (5-ounce) lean lamb loin chops (1 inch thick)
- ¼ cup plus 1 tablespoon chopped fresh mint, divided
Trim fat from chops. Combine onion, 3 tablespoons mint, garlic, and pepper in a large heavy-duty, zip-top plastic bag. Add chops; seal bag, and shake until chops are well coated.
