Grilled Mushroom and Asparagus Fajitas

Ingredients

  • pepper - to taste
  • ½ cup(s) olive oil

  • 1 teaspoon(s) salt
  • 2/3 cup(s) rice vinegar
  • 2 tablespoon(s) cilantro - chopped
  • ¼ cup(s) tomato - diced

    • ¼ teaspoon(s) cumin
    • 2 tablespoon(s) Dijon mustard
    • 2 clove(s) garlic - minced
    • 8 ounce(s) baby bella mushrooms - sliced
    • 1 onion - cut into rings
    • 1 bunch(s) asparagus - trimmed
    • olive oil to sprinkle over red pepper
    • grated cheese, sour cream, salsa, etc for condiments
    • 1 tablespoon(s) yellow onion - diced
    • CHIPOTLE DRESSING:
    • 2 tablespoon(s) chipotle pureé - see instructions
    • 1 red bell pepper
