Ingredients

  • ¼ cup unsalted cashews or blanched almonds
  • ½ cup roughly chopped fresh mint
  • ¼ cup peanut or canola oil; more for brushing
  • ½ cup plain whole-milk yogurt
  • 1-½ cups roughly chopped fresh cilantro
  • 1 Ib. 7-½ oz. (5-¼ cups) unbleached all-purpose flour; more as needed
  • 1 tsp. kosher salt
  • + 10 more ingredients
    • Kosher salt for sprinkling
    • 4 tsp. baking powder
    • 2 tsp. granulated sugar
    • 6 Tbs. peanut or canola oil; more as needed for the grill
    • 4 tsp. kosher salt
    • 1 Tbs. chopped fresh ginger
    • 1 large egg
    • 2 cloves garlic, chopped
    • Melted butter for brushing
    • 2/3 cup farmer cheese or queso fresco, crumbled (3-½ oz.)

Combine the flour, baking powder, salt, and sugar in the bowl of a stand mixer fitted with the dough hook.
