Grilled Peaches with Raspberry Butter & Cookie Crumbs

  • 4 ripe white peaches
  • 1 Tbs. Chambord
  • 1/8 tsp. sea or kosher salt
  • 2 Tbs. seedless raspberry jam
  • 1 Tbs. light brown sugar
  • Vegetable oil for the grill
  • About 2 tsp. untoasted walnut or hazelnut oil
  • + 3 more ingredients
    • 2 Tbs. unsalted butter, softened
    • ½ cup crushed almond biscotti or amaretti cookies
    • 4 to 8 scoops of best-quality vanilla ice cream
