Grilled Potato and Corn Salad

Ingredients

  • red bell pepper, cut into ¼ inch cubes
  • green bell pepper, cut into ¼ inch cubes
  • yellow bell pepper, cut into ¼ inch cubes
  • ½ cup(s) small red onion, diced
  • ½ cup(s) fresh basil, chopped
  • 2 clove(s) garlic, chopped fine
  • kosher salt and fresh ground pepper to taste

    • 2 ears of fresh sweet corn, husks and silks removed
    • 2 pound(s) small red potatoes, washed and cut into ¾ inch cubes
    • ¼ cup(s) plus 3 tablespoons extra virgin olive oil
    • 2 cup(s) red, yellow or orange cherry tomatoes, halved
    • 3 tablespoon(s) red wine vinegar
