Grilled Potatoes and Asparagus with Basil and Parmesan
Ingredients
- Cooking oil spray or salad oil
- 1 pound red thin-skin potatoes, scrubbed
- 2 teaspoons fresh-ground pepper
- ¼ cup extra-virgin olive oil
- ¼ cup seasoned rice vinegar
- 1/3 cup shaved parmesan cheese (see notes)
- Basil sprigs, rinsed

- ½ cup lightly packed fresh basil leaves, rinsed
- 1 ½ pounds asparagus
1. In a 9- by 13-inch pan, mix vinegar, oil, pepper, and 1/2 teaspoon salt. 2. Cut potatoes into 1/4-inch-thick slices; add to pan and mix to coat. 3.
