Grilled Scallops, Zucchini, and Scallions with White Beans

Ingredients

  • 1 teaspoon Dijon mustard
  • 1 15 1/2-ounce can small white beans
  • 24 large sea scallops
  • fresh cilantro sprigs
  • 1 lemon
  • 2 teaspoons olive oil
  • 8 10-inch wooden skewers
  • + 5 more ingredients
    • 1 ½ teaspoons ground cumin
    • 2 medium zucchini
    • ½ cup fresh cilantro sprigs
    • 8 large scallions
    • 2 teaspoons coarse salt
