Grilled Sicilian Vegetable Salad with Spicy Gruyère Toast

- 6 cups mixed greens
- 2 large garlic cloves, smashed
- 1/8 teaspoon cayenne pepper
- 1/8 teaspoon crushed red pepper
- 1 cup sliced red or yellow bell pepper
- 2 tablespoons grated Parmesan or Romano cheese
- ¼ cup plus 2 tablespoons extra-virgin olive oil

- 2 teaspoons dried Italian herb mixture
- ½ pound baked ciabatta loaf

- ½ cup grated Gruyère cheese
- ½ cup sliced yellow squash
- 1 tablespoon balsamic vinegar
- Olive oil cooking spray
- ½ teaspoon sea salt
- 1/8 teaspoon dry mustard
- 1 cup sliced red onion
- 2 tablespoons minced fresh parsley
