  • 1 teaspoon cumin seeds
  • 4 cups water
  • 1 tablespoon all-purpose flour
  • 1 teaspoon cider vinegar
  • 3 garlic cloves
  • 1 12-oz jar roasted red peppers
  • pickled red onions with cilantro

    • 1 tablespoon fresh oregano or 3/4 teaspoon dried
    • 3 ounces dried guajillo chiles
    • 2 tablespoons unsalted butter
    • 6 3/4-inch-thick boneless rib-eye steaks (7 to 8 oz each)
