Grilled strawberries with Pimm’s & vanilla ice cream


  • a few sprigs fresh mint
  • vanilla ice cream, to serve
  • 8 butter shortbread biscuits
  • 2 splashes Pimm's
  • 1 vanilla pod, split lengthways and seeds scraped out
  • 2 pieces stem ginger in syrup, chopped, plus 3 tablespoons of the ginger syrup from the jar
  • 500 g strawberries, washed
