Grilled Sweet Potato Fingers with Curry Dip

  • 4 sweet potatoes (about 10 oz. each), peeled
  • Salt and pepper
  • 1 ½ cups light mayonnaise
  • ½ small onion, grated
  • 2 teaspoons mild curry powder
  • ¼ teaspoon cayenne pepper
  • 2 tablespoons lemon juice
  • + 1 more ingredients
    • 2 tablespoons olive oil

Mix mayonnaise, lemon juice, onion and curry powder in a bowl and season with salt and pepper. Cover and chill until ready to serve. (Dip can be made up to 2 days in advance.)
