Grilled Sweet Potato Salad with Balsamic Vinegarette
- ½ cup(s) red bell pepper, diced
- ¼ cup(s) green onions, sliced
- ¼ cup(s) fresh flat leaf parsley, chopped
- non-stick cooking spray
- 4 sweet potatoes, peeled and cut into ½" slices
