Grilled Sweet Potato Salad with Balsamic Vinegarette


  • ½ cup(s) red bell pepper, diced
  • ¼ cup(s) green onions, sliced
  • ¼ cup(s) fresh flat leaf parsley, chopped
  • non-stick cooking spray
  • 4 sweet potatoes, peeled and cut into ½" slices
