  • 2 tablespoons fresh flat-leaf parsley or cilantro, finely chopped
  • 5 sweet potatoes, peeled and cut into 1/4-inch-thick slices (5 lb.)
  • Salt and pepper
  • 3 tablespoons unsalted butter, cut into pieces
  • 3 tablespoons vegetable oil
