Ingredients

  • 8 tomatoes cut into 6 wedges
  • 3 tablespoon(s) fresh lime juice
  • 2 cup(s) crumbled cotija or ricotta salata cheese
  • Kosher salt and freshly ground pepper
  • 0.25 cup(s) extra-virgin olive oil
  • Canola oil
  • 2 bunch(es) of scallions
