Ingredients

  • ½ cup (2 ounces) feta cheese, crumbled
  • 4 cups hot cooked basmati rice
  • Cooking spray
  • 4 (1/2-inch-thick) slices Vidalia or other sweet onion
  • 1 yellow bell pepper, quartered
  • 1 red bell pepper, quartered
  • 2 medium zucchini, halved lengthwise (about 1 pound)
  • + 10 more ingredients
    • 3 garlic cloves, minced
    • Vegetables:
    • ½ teaspoon salt
    • 2 tablespoons olive oil
    • 1 teaspoon freshly ground black pepper
    • ¼ cup balsamic vinegar
    • Vinaigrette:
    • 2 tablespoons Dijon mustard
    • Remaining ingredients:
    • 4 (4-inch) portobello caps

Prepare grill. To prepare vinaigrette, combine first 6 ingredients in a small bowl; stir well with a whisk.
