Grilled Vegetables with Feta
Ingredients
- 1 teaspoon freshly ground black pepper
- 2 tablespoons olive oil
- 2 tablespoons Dijon mustard
- ¼ cup balsamic vinegar
- Vinaigrette:
- ½ cup (2 ounces) feta cheese, crumbled
- 4 cups hot cooked basmati rice

- 4 (1/2-inch-thick) slices Vidalia or other sweet onion
- 1 yellow bell pepper, quartered
- 1 red bell pepper, quartered
- 2 medium zucchini, halved lengthwise (about 1 pound)

- 3 garlic cloves, minced
- ½ teaspoon salt
Prepare grill. To prepare vinaigrette, combine first 6 ingredients in a small bowl; stir well with a whisk.
