Grilled Zucchini & Goat Cheese Roll-Ups

  • kosher salt
  • 3 oz. goat cheese, at room temperature
  • 3 small zucchini, cut into ¼-inch thick lengthwise strips
  • Heaping ½ tsp. fresh thyme, chopped
  • 1 Tbs. finely chopped oil-packed sun-dried tomatoes, well drained
  • extra-virgin olive oil
  • 2 Tbs. freshly grated Parmigiano Reggiano

Heat a gas grill to high. Brush both sides of the zucchini strips with olive oil and season with kosher salt.
