Ingredients

  • ½ cup plus 1 tablespoon vegetable oil
  • 1 3-inch piece of carrot, peeled
  • Salt and freshly ground pepper
  • 1 medium shallot, thinly sliced crosswise
  • 3 tablespoons rice vinegar
  • Toasted sesame seeds, cilantro leaves and finely chopped chives for garnish
  • 3 cloves garlic, coarsely chopped
  • + 8 more ingredients
    • 4 6-ounce skinless grouper fillets
    • 1 tablespoon mirin
    • 1 tablespoon sake
    • 1 long red fresh chile, cut into long fine strips
    • 2 teaspoons whole-grain mustard
    • 3 tablespoons soy sauce
    • 1 medium seedless cucumber, peeled and halved crosswise
    • 1 3-inch piece of daikon, peeled

In a blender, puree the soy sauce with the rice vinegar, mirin, sake, mustard and one-third of the garlic.
