Ingredients

  • 2 tablespoons fresh lime juice
  • ¼ cup water
  • 4 lime wedges
  • ¼ cup jarred diced pimiento, divided
  • 1 teaspoon olive oil
  • 2 tablespoons capers
  • 4 (6-ounce) halibut fillets
  • + 4 more ingredients
    • 2 cups diced seeded tomato (about 2)
    • 1 tablespoon finely chopped seeded jalapeño pepper
    • ¼ teaspoon salt
    • 1 cup thinly vertically sliced onion (about 1 medium)

Combine juice and fish in a zip-top plastic bag; seal. Marinate in refrigerator 2 hours, turning once. Heat oil in a large skillet over medium heat.
